Our extra virgin olive oil
Around the courtyard we grow our own olive trees, Leccina and Favolosa. It's the oil you'll find on the table every morning during your stay — and the same one you can take home with you.
Our grove
Leccina and Favolosa
Our olive trees are Leccina and Favolosa — the two cultivars approved for new groves in the areas of Salento hit by Xylella. Like many families in this area, we chose to start again from exactly here, to keep alive a tradition that has continued in Bagnolo del Salento for generations — the same one still living in the centuries-old olive tree that shades our courtyard.
Our harvest becomes an extra virgin olive oil that we bring to our guests' table every day, and that we also offer for sale to anyone who wants to take home an authentic piece of Salento.
The taste
A fruitiness that speaks of Salento
Two varieties, two characters, one oil.
Leccina
Brings sweetness and balance: a light fruitiness, with just a hint of bitterness and pepper.
Favolosa
Adds bolder notes of freshly cut grass and ripe tomato, with a medium-intense fruitiness and a peppery edge that slightly outweighs the bitterness.
Together
Our extra virgin blend brings the two varieties together: green colour with golden reflections, and a balance between sweetness and character.

During your stay, our oil is always on the table, at breakfast and in the kitchen for you to use. On request, we can also arrange a small guided tasting in the courtyard, to tell you about the difference between the two varieties and how our harvest comes together.
